One simple question, who can resist an apple martini?
Apple Martini, most commonly know as Appletini, is one of my favorites cocktails as it is mildly fruity with a hint of vodka and sugar. Although the cake presented does not contain the vodka, it is where the inspiration for the name of the cake came from.
I call the recipe “Apple Martini Crumble Cake” as it entails of apples, martini and a crumbly dough on top. This was done in such way that it resembled a cake we do it on Christmas in my house here in Angola, bolo esplêndido.
The cake has various ingredients ranging from dried fruits, nuts to Martini Rosso. Some people use Port wine and grated nuts for the cake, but the one we make it is different since Martini packed with flavor. The sweet taste of the apples combined with cinnamon and a crumbly topping combine in such divine manner.
It is impossible to resist. This cake is perfect for a tea with friends or a family gathering. I guarantee you everyone will love it, and if they don’t enjoy, make them a mild fruity appletini. Hope you enjoy this recipe.
Apple Martini Crumble Cake
- 2 cups AP flour
- 1 1/2 cups sugar
- 1 teaspoon baking powder
- 4 eggs
- 125 g butter, plus additional for the pan
- 1 teaspoon vanilla extract
- 1/4 cup + 2 tablespoon Martini Rosso
- 1/4 cup + 2 tablespoon milk
- 1 green apple, cut in small pieces
- 1/2 lemon
- 1/4 cup agave nectar/honey
- 1 tablespoon cinnamon
- 1/3 cup + 2 tablespoon AP flour
- 1/3 cup sugar
- 1/2 teaspoon cinnamon
- 1/4 cup unsalted butter
Preheat the oven to 170 ºC (340 ºF).
Squeeze the lemon juice from the lemon and add it to the apples. This step is important to avoid the apple from browning (oxidizing). Mix the apple with the agave nectar/honey and cinnamon. The cinnamon quantity and agave/honey can be increased if wanted. Remember that the agave/honey are only needed to sweeten the apples a bit.
Mix all of the ingredients in a bowl, with the butter being the last one to be added. Once everything well mixed, reserve the topping for future use.
Beat the eggs and sugar until the mixture is bright and creamy. Add the room temperature butter to the egg and sugar mixture. Sift the flour with the baking soda, and mix the vanilla extract with the milk and Martini. To the batter, add half liquid and dry ingredients alternatively until well mixed. Add the prepared cake batter into a greased pan (9 in springform).
Distribute well the apple topping on the batter and sprinkle with the streusel topping. Bake it until the wooden skewer comes clean from the middle of the cake. Enjoy it with a nice cup of tea, coffee or plain.
