Butternut Squash Salad

You know that morbid wish you have to eat a nice vegetable dish at night? Happens to me once in a while. I am no vegetarian or vegan, but I do enjoy a nice delicious plate of vegetables. It is a nice dish, perfect for the times I don’t feel like eating too much. Sure there are many of you out there who feel like me as well.

Butternut squash is probably one of my favorite vegetables specially for cream soups. It has a distinct comfort to its flavor that makes me travel to a warm comforter. You can see that comforter on my butternut squash cream. You  can actually pair it with some of your favorite vegetables.

The salad entails butternut squash, carrots, onions and red chilies. You can add sliced zucchini or asparagus. It is such a nice recipe, you can add some of your favorite vegetables. One thing you should keep in mind is the cooking time for the vegetables. One of the things that will influence in the cooking time will be the thickness of the vegetables. Try to get similar vegetables so you do not end up having some vegetables overcooked.

The recipe has a very nice surprise as well. It is very versatile because as a salad you can your favorite seasoning. I am now into sweet dressings like something with chili sauce. Try a balsamic vinaigrette, green goddess or Italian dressing. The combination will not disappoint you. Be creative here, it is your show.

Butternut Squash Cooked Salad

 

Ingredients:

  • 1/2 kg butternut squash
  • 2 carrots
  • 1 onion
  • 1 – 2 red chilli pepper
  • 3 – 4 garlic cloves, minced
  • 1 teaspoon black pepper
  • 1/2 teaspoon paprika
  • Fresh/Dried herbs (parsley for example)
  •  1 1/2 – 2 tablespoon olive oil
  • Salt

Instructions:

Peel and wash the vegetables.

Using a vegetable peeler, slice the butternut squash and the carrots. Place them in a separate bowl.

Cut the onions and the red chili pepper in Julienne style and add it to the butternut squash bowl.

In a small bowl, mix the garlic, black pepper, dried herbs, paprika, olive oil and salt. Ensure the taste of the mixture is good for you.

Transfer the olive oil mixture to the vegetable bowl, and distribute it well. Let be sit for at least 10 – 15 minutes.

Place a frying pan in the stove and turn it to medium heat. Add the vegetable mixture to the pan.

Fry the vegetables for around 5 minutes and remove it from the heat. The way the vegetables were cut they do not need to cook for a long time.

Once the vegetables are done, season with your favorite salad dressing or eat it as it is. Since I recently did the sweet chili sauce, I added a little bit to the salad. Delicious it was. Enjoy this beautiful salad.

The butternut squash salad is a perfect fit for you vegetarian / vegan. If you are not vegetarian, then you can pair this up with your favorite meat / fish dish. Make sure to add your sauce to dazzle up your day. Enjoy it.
