Easy Cloud (Sunny-Side Up) Eggs

There are so many delicious recipes in the world that it gets hard to get into a diet. It is even harder to find a healthier and delicious version for them, which frustrates me sometimes. One thing I really enjoy, and I am unafraid of saying is Sunny-Side Up Eggs. I love them fried in olive oil with plenty of pepper. Just look at the photo below, does it not look delicious? Yes, it does. However it is a bit unhealthy to be eating greasy food the whole time so I needed to find a better version. Since the search is endless, I finally came across an interesting version for a sunny side up eggs.

I am sure you know where I got this version from… the INTERNET, of course. I love cruising around the internet for some ideas and inspiration, and this one turn out to be a very good one.

The cloud eggs become a sensation on social media recently and there was a reason why. The eggs taste just like a regular sunny-side up version, but it is much lighter and to some extent healthier since it does not need to be fried. Instead the egg whites are beaten until in stiff peaks and put in the oven. This way the egg whites will hold their stiff peaks and allow a much filling version of themselves. Beating the whites is an important step otherwise they will be flat in the sheet. Nobody like their eggs like that 🙂

The recipe today will be for three people, but you can increase or decrease the amount of eggs as you may wish. Remember that you can add other ingredients to them, but make sure it will not affect the density of the stiff egg whites. Although the recipe for the cloud eggs takes longer than a regular sunny side up eggs, there are things worth doing for a nice health status. Are you willing to do it? Lets go! 😉

Cloud Eggs

Ingredients:

  • 3 eggs, separated
  • Cayenne pepper
  • Black pepper
  • Parsley
  • Salt

Instructions:

Preheat the oven to 220 °C (430 °F).

Prepare a tray with parchment paper. Ensure the paper fits the tray very well.

Beat the egg whites to stiff peaks with a small quantity of salt. You can do this step using a stand mixer or yours hands. Although I think it is very exhausting to beat egg whites by hands, once in a while it is a great exercise.

Once egg whites reach stiff peaks, add the parsley and the black and cayenne pepper to them. You can add some bacon, paprika or cheese to the stiff egg whites. Mix very well, and with a spoon transfer it to the prepared tray.

Bake the egg whites until it gets golden. Once in that state, remove from and turn off the oven and add the egg yolks to the top of the baked egg whites. Place the tray back in the oven for around 2 minutes and remove from the heat. Sprinkle with pepper, cilantro / parsley and bacon bits.
