Tired of eating plain bread, yogurt or that greasy omelet in the morning? Are you searching for something fast and easy to do? Look no further, here is the baked cheesy omelet. The fun part about this recipe is that any seasoning and filling can be used.
The most important meal of the day is the breakfast for many people. It gives you energy to fulfill many of the daily activities, and additionally helps cognitive performance. According to research, a healthy breakfast can help regulate blood glucose for diabetic people, hunger and weight. An ideal breakfast needs to be balanced with lean protein, milk, whole grain and fruit and vegetables.
There is a big variety of breakfast or snacks to indulge on during the day. For a while, my healthy obsession was yogurt parfait. The creaminess of the yogurt, crunchiness of the granola and acidic sweetness of the fruit makes it for a perfect breakfast. So many different textures make up such beautiful dish, yogurt parfait.
I have had a variety of breakfast, but the latest 2016 breakfast obsession was the breakfast rice. This last one is done with basmati rice, sweet soy sauce, some onions, scallions, shredded chicken, peas and a beautiful fried egg on top. I’ll share the recipe in a couple of weeks. Despite this recipe being absolutely tasty, overeating it ruined the essence of the dish. Tried to go back to my normal, omelets. They are my to go breakfast, if there isn’t much to eat. However, it is good to put off the frying pan on the side once in a while. After researching for some recipes, I found one that was both healthy and satisfying. This one is perfect as it has the essence of the omelet and does not need to be fried. Take a look at this oven baked cheesy omelet, with low oil as a bonus surprise.
Oven Baked Cheesy Omelet

- 2 eggs
- 2 tablespoons milk
- 1 teaspoon chopped parsley
- 2 tablespoons cream cheese
- 2 tablespoons flour
- 1 tablespoon chopped onion
- 4 small cubes/2 slices of cheese
- Pinch of salt and pepper
Preheat the oven at 200 °C (390 °F).
In a small bowl, place all the ingredients with the exception of the cubes/slices of cheese. Beat everything well until a homogeneous mixture is reached. Grease up two ramekins with butter, and fill it with the mixture. Make sure to distribute it into two equal portions.
Add the two cubes or roll the slices of cheese into the middle of the filled ramekin. Put a small tray with water, and place the ramekins on top of it. Bake the omelet for around 20-25 minutes. Change to broil for 2-3 minutes just to have a golden crust.
Eat the omelet plain, with ham, prosciutto, salame, crispy bacon and many others. Enjoy it with an additional glass of freshly squeezed orange juice or a fruit smoothie to complete a healthy meal.
