Chocolate Muffins

 There are a million types of deliciousness in this world that can soothe our hearts in a beat. Those deliciousness can bring us a sense of comfort and wonderful memories of childhood or even as adults, and who can resist them? The hardest thing to resist in the cooking world is the CHOCOLATE-CHOCOLAT.


The creaminess and smoothness of it can pretty much help you soothe all the bad mood/feelings you have during the day. It is definitely the best comfort food. Chocolate is such a star that besides making you happy, it has many other benefits ranging from reducing risk of a stroke, cholesterol to being great for your skin (Chocolate Benefits). Who doesn’t want to have a good skin? I do! 🙂

You can already imagine that today the dish will be related to chocolate. Are you ready for the CHOCOLATE recipe? I certainly am and already ate it. You will enjoy this recipe as it is something like pound cake, but lighter. It may be very close to the Portuguese cake, Pão-de-Ló. Despite not having a dense texture like a regular pound cake nor the lightness of the Pão-de-Ló, it can certainly satisfy everyone’s chocolate needs.

Enough talk, lets talk recipe. Here is the recipe for one of the top 5 chocolate recipes I have ever tried and done. I think there are some simpler chocolate recipes that have the power to bring comfort and warmth to us and this is one of them. I hope it will be a part of your list as well.


Chocolate Muffins


Cake Batter

  • 1 cup butter, plus 1 tablespoon for greasing the pan
  • 1 1/4 cup granulated white sugar
  • 4 large eggs
  • 2 teaspoon vanilla extract
  • 1/4 cup + 2 tablespoon boiling water
  • 1/2 cup cocoa powder
  • 1 1/2 cup cake flour
  • 1 1/2 teaspoon baking powder
  • 1/2 cup milk

Chocolate Ganache 

  • 150 – 200 mL heavy whipping cream
  • 100 g chocolate bar (70 % cocoa)
  • 1-2 tablespoon sugar

NOTE: Before starting the recipe, If you have no cake flour, it is pretty easy to make it at home. Not to make it, but to make a substitute for it. Per each cup of AP flour needed, remove 2 tablespoons and add 2 tablespoons of cornstarch. For more information/help, you can visit the post on Cake Flour.


Cake dough

Mix well the water with the cocoa powder in a small bowl and set it aside to cool down.

Beat the room temperature butter until smooth, add slowly add the sugar. Once fluffy, add the eggs one at the time. Make sure the egg is fully incorporated in the dough before adding another one.

Add the cocoa powder mixture to the dough. Scrape the sides of the bowl  once in a while to be certain that everything will be fully incorporated. Alternate the additions of milk+vanilla extract mixture and the cake flour. Mix it until a homogeneous mixture is reached.

Place the cupcake liners into the muffin pan. Fill up the liners until 3/4 of the way. Avoid filling up the liners until the top. If you do so, you will have the following results.

Bake it until the toothpick comes out clean from the center of the cake. Remove the muffin pan from the oven, and let it cool.

Chocolate ganache

In a heat resistant bowl, melt the chocolate and butter. Once melted, slowly add the heavy whipping cream and the sugar until the desired consistency is reached. When your ganache is cooled off, add a small quantity of cream cheese to make your ganache firm.

Cover the top part of the muffin. Decorate it using the pastry bag and your favorite tip. It is a delicious recipe, I am sure you are going to enjoy it.
