Cinco de Mayo Tres Leches Cake

The date is celebrated because of the Mexican Army victory over French forces at Battle of Puebla. Obviously in Angola celebrations on this day are null, but since I lived in the Louisiana I remember being accompanied by a nice glass of margarita, chilaquiles, guacamole, salsa and a burrito.

Today I am here to present to you a very nice recipe that most of us love it very much. I have to say that when I lived in the US, I didn’t actually appreciate this dessert that much. It was one of those recipes which I didn’t pay much attention to. However this has changed since 2015 when I started to miss it. Since then I have been doing this recipe whenever I can for my family. I am talking about Tres Leches cake or Three Milk Cake.

A moist cake with a whipping cream and fruits topping. The combination of several types of milk and fruits makes for this cake a delicious experience. I was inspired by Martha Stewart’s Tres Leches, but I had to deviate from the recipe because there are certain things here in Angola which are hard to find. One of them is evaporated milk which was substituted by coconut milk. Best thing about coconut milk is despite finding it in store, you can always do it at home. It is just perfect. You can also use almond milk, it will taste delicious.

The recipe is truly a delight because you can add whichever fruits you would like and change as well the type of milk added. The mixture is very unique, and it gets even better on the next day. It is perfect for any type of event whether with the family or friends. Who doesn’t want tres leches in a warm/cold day? It is mouthwatering for all of the occasions and will definitely satisfy your sweet tooth.

Tres Leches Cake


Cake Batter

  • 1/2 cup melted cooled salted butter, plus additional for the cake pan
  • 1 1/2 cups all purpose flour
  • 1 teaspoon baking powder
  • 5 large eggs
  • 1 1/4 cup sugar
  • 2 teaspoons vanilla extract

Milk Concoction

  • 1 can sweetened condensed milk
  • 1/2 cup coconut milk
  • 1 1/2 cup whole milk


  • 2 cups heavy cream
  • Fresh fruit if available, or canned fruit


Preheat the oven to 180 ºC (350 ºF). Prepare the pan by greasing it with butter and flouring it. Make sure the pan (9 in round springform, square, or any pan of your taste) is greased before you start preparing the cake.

Sift the flour, salt and baking powder into a bowl.

In a separate bowl, beat the eggs with 1 cup of sugar until you obtain a mixture that is both pale and thick. Add 1/2 cup of whole milk and vanilla extract to the mixture while beating.

Slowly and carefully, add the flour mixture with the mixer on low speed. Before doing this step, make sure your melted butter is cooled. Once cooled, add it to the mixture using a spatula to fold it in.

Move the cake batter to the pan. Place it at the oven and bake it until the toothpick comes out cleaned.

Remove the cake from the oven, and poke all around the cake with toothpick. You can also cut the cake in the middle if you are planning to put some cream filling.

Mix all the milk in a bowl and reserve it. Add the milk into the cake and let it seat for some time, at least 2-3 hours. I would recommend to leave overnight because the milk mixture infuses completely into the cake.

Beat the heavy cream with 1/4 cup of sugar into peaks. If you want to use some filling, increase the quantity of cream and sugar. After you have both halves of the cake soaked, add some cream with fruits. And continue to assemble the cake.

Top the cake with the whipping cream and sliced fruits, and enjoy it!
