I absolutely love chocolates, no matter the type (white, dark, milk) or additional ingredients (nuts, dried fruits, cookies, mint, etc). My favorite of them all will have to be the milk chocolate with any sort of cookies. It is the crunchiness of the cookies mixed with the velvety and sweet taste of chocolate takes me to chocolate heaven. And yes, that place exists even if it is only in my taste buds dreams 🙂
Obviously most of us would love to have chocolate during the breakfast, and thankfully there are several ways of making that happen. How about a fantastic and hot chocolate in the morning? I got you there. Perfect when paired with a nice and simple buttery toast. Not everything needs to involve hard work like some awesome Chocolate Muffins. The awesome recipe today is chocolate pancakes. What else? Pancakes and crepes are some of the most delicious breakfasts to make for yourself and the family. It is especially elegant whenever you pair it with chocolate. Drizzle with chocolate ganache and ice cream, and you can even use it as a desserts. Perfect as well to be paired with red fruits and some bananas.
Chocolate Pancakes with Ganache
- 2 eggs at room temperature
- 3 tablespoons sugar
- 1 1/2 cup cake flour
- 1 1/3 – 1 1/2 cup milk at room temperature
- 3 tablespoons of melted butter
- 1 1/2 – 2 teaspoon of vanilla extract
- 1/4 – 1/2 cup cocoa powder
- 2 – 2 1/2 teaspoon baking powder
- 1/2 – 1 tablespoon butter, for frying
- 150 – 200 mL heavy whipping cream
- 100 g chocolate bar (70 % cocoa)
- 1-2 tablespoon sugar
The recipe for chocolate ganache remains the same as the one used for the Carrot Cake. Please follow those instructions 🙂
Separate the eggs into yolk and whites.Sift all dry ingredients in a bowl.
Beat the egg whites until they reach soft peaks.
Next, mix well the yolks with sugar in a bowl. Add the milk, melted butter and the vanilla extract to the mixture afterwards.
Slowly add the dry ingredients to the egg mixture. Once everything is properly mixed, fold the beaten egg whites to the mixture. Make sure to do it carefully.
Use a cup to measure the quantity of batter added in the oiled pan. Fill it up until 1/4 or just a little above. This is done to prevent you pancake to be huge and to help you turn it without any difficulties.
In medium heat, add the batter to the pan. Once you start seeing bubble on the pancake, flip it and let the other side cook. Repeat the process until all batter is over.
Place the pancakes in a tower, and add the chocolate ganache on top of it. Garnish with some berries, I chose strawberries. Enjoy it.
