Pineapple Kissangua, A Fermented Drink

Changing our eating habits is the start to a new healthy life. Lately I started to change my diet step by step. I wanted to see the results on my health short term so I can decided how to change my lifestyle, food habits. Two weeks ago I abstained of eating any sort of meat, the following week it was only white meat, and this week is drinks with low amount of sugar. Mixed feelings arise every week as I felt part of my goodies were being avoided, but I must say I loved the week without meat.

Sugar consumption is a big issue right now in my life, and I am looking into decreasing the quantity ingested. I use processed sugar in my cake’s recipe, but I do not eat it everyday. The way that I consume the most quantity of sugar is through drinks.  I know the store bought juice has a large amount of added sugar and so do my tea in the morning and milk. I decided to stop consuming super sweet drinks in between meals.

Giving up sugar is very hard, specially if your life revolves around it. I grew up enjoying many sweet drinks and fruits, and to let go without my organism fighting is almost impossible. My organism loves sugar and lets face it there is always temptation at home. All the corners of the kitchen have something sweet and delicious, but when that happens I lately turn to fruits. Easier and faster. I just needed to find a way to replace the sweet drinks, but not erase them completely.

Drinking sweet beverages takes a big part of your diet, and to find an easy substitute is challenging. You could go for natural smoothies or juices, but the process of making them every morning sometimes gets tiring. I remember that we have this very nice recipe for a traditional drink in Angola. Since the quantity of sugar depends on the person consuming, it gives you a chance to have control of that part of the drink. The drink is called kissangua.

Kissuanga is a traditional drink consumed by Ovimbundu people in Angola. You can make it into any type you would like, but in Angola the most common ones are corn and pineapple. The secret to the drink is to allow to ferment exactly for two days. If you go beyond that it will become something else we call kimbombo, which has an alcohol content higher. And yes, sugar is absolutely necessary for the fermentation process.

The recipe of the day as you may know from the tittle of the blog is pineapple kissangua, instead of corn. Although the corn kissangua is delicious, I find it too strong for people who are not used to fermented drinks. Kissagua is quite beneficial to health as are most of the fermented drinks. This is mainly due to the presence of probiotics. These are bacteria and yeast which contribute to a healthy digestion, immune system, weight loss and healthy skin. Probiotics are also a great to fight food borne illnesses. Additionally to add the foods containing them have a very characteristic taste which makes it impossible not to eat it. Just remember of your cheese.

So please, grab your pen and paper to add this to the list of drinks you would like to try. It is a drink that requires very little effort, and you will take the most out of the pineapple by using its peel. This is the part I enjoy when doing kissangua you avoid throwing away the peels. Additionally kissangua will make your stomach will be glad.

Pineapple Kissangua

Ingredients:

  • 4 cups water
  • 1/2 – 1 cup sugar
  • 2 cinnamon sticks, optional
  • Peels from a whole pineapple

Instructions:

Add the pineapple peels, water and sugar. Turn on the stove. Let the mixture boil for a maximum of 5 minutes. Turn off the stove.

Add the cinnamon sticks and let the mixture sit for two days in a warm and dark place. This is to allow fermentation to happen.

Once 2 days have passed, strain it and refrigerate it. The drink is ready to be consumed once refrigerated.
