Daily Suggestion: Potato and Celery Cream

We go around life trying to find things that will makes us feel good and perhaps gives meaning to it. The latter one require an introspection, and perhaps time to analyze what we have in our hands. If you want to find something to make you feel good, you can do it easily. Small gestures from people, a beautiful day, lifetime events and of course from food as you know.

The fastest and easiest way to feel good is from a nicely prepared dish by our parents, for example. The effort and love they put into dishes gives them a much deeper taste and course comfort. This comfort can take us from a very bad day to a great one. As if everything would be good again. Some of the comfort foods I like are the creams and soups. Creams come first than soups as they have the ability to carry more flavor and being denser. So many ingredients can be added to make creams delicious and earthy.

The recipe today is one of my favorite creams. It is made with potatoes, onions, celery and carrots. You could do without carrots, but they carry taste and smell on their own that you would not want to miss out on it. The creaminess, earthiness and deliciousness from the vegetables delivered to you in one simple tablespoon. Get ready for a cream that will wrap you around to bring you comfort, and offers a kick to your taste buds.

Potery (Potato + Celery) Cream

  • 3 large potatoes, diced
  • ½ onion, chopped
  • 2 celery stalks, chopped
  • 1 – 2 cup chicken broth
  • 1 medium carrot, chopped
  • 1-2 teaspoon smashed garlic with salt
  • Crunchy bacon bits, for decoration
  • Dried herbs, for decoration

Wash your vegetables well, and drain them well.

Sautee the onions with a small quantity of olive oil. Once it goldens up, add the smashed garlic + salt and the rest of the vegetables. Let them saute for around 1 – 2 minutes, and add the chicken stock.

Allow the vegetables to fully cook at medium heat. After cooked, transfer the contents in the pot to the blender or food processor. Mash the vegetables well with the fluid. Keep in mind you can add more chicken broth to make the consistency to your taste.

Once well blended, transfer it back to the pot and let it simmer for 2 –  3 minutes. At this step you can add a small quantity of black pepper.

Serve the cream in a bowl, sprinkle it with dried herbs and bits of bacon.

Until next time, Hungry people.
