Tasty Garlicky Seasonings and Dips

Garlic is part of the my MUST list of ingredients along side with black pepper. I love the taste in basically everything. Now you are in sync with garlic after reading the Cooking Basics III:  The Power of Garlic.

Since sharing is caring, I would like to present to you a couple of recipes that can be used as seasoning or sauces for vegetables, meat, fries, etc. Very easy  and tasty recipes done in the food processor, blender or by hand, if you prefer. If you are crazy for garlic like this person writing this blog post, then you will get hooked on these recipes. Let’s get this party started 🙂

Garlic Seasoning

Garlic + Cilantro

Coriandrum sativum known as cilantro is one of the most fragrant herbs I know. It makes dishes like guacamole, black beans, salsa and others remarkable for their taste.  The seeds from cilantro, coriander, together with garlic synchronize very well with the taste of lamb and seafood. It is my favorite herbs and with no calories, fat or sodium, cilantro is a great addition to many seasonings and this is one of them. The recipe can be used for vegetables, seafood and fish.

Ingredients:

  • 6 garlic cloves
  • A bunch of cilantro
  • Salt
  • 3 tablespoon white wine
  • 1 – 2 tablespoon lemon juice
  • 1/2 teaspoon black pepper
  • 1/4 cup olive oil
Garlic + Parsley + Paprika

I am big fan of aromatic herbs, but there are some that are easier to use and applicable to most dishes. Together with lemon and garlic, parsley is part of the list of the common kitchen ingredients. Tabouleh is a nice refreshing salad made with parsley, mint, tomatoes, olive oil, salt and lemon juice. Absolutely perfect for a nice summer lunch or dinner. Why not use parsley in a seasoning? The herb is a crowd pleaser and perfect for seasonings. The recipe can be used for grilled meat, vegetables and fish as well.

Ingredients:

  • 6 garlic cloves
  • A bunch of parsley
  • 1 teaspoon paprika
  • Salt
  • 1/2 teaspoon black pepper
  • 1/4 cup olive oil

Instructions for the Seasonings:

Add all ingredients to the food processor and mix it well until it becomes a paste. Rub it well in fish/meat for better marinating, and let it rest for at least 30 minutes.

If there is any leftover seasoning, keep refrigerated for a day.

Garlic Dipping Sauces

Garlic + Smântână

In my last visit to Romania in 2016, I tried a very nice homemade dip made with garlic, lots of garlic. It went so well with the seasoned oven baked potatoes that I still drool just by the thought of it. It was made with a smântână, which is sour cream in Romania. The cream will help to attenuate the flavor of the garlic, but still provide a great taste for the dishes. You can try it with mayonnaise, if it is hard to find sour cream. Add any other seasoning you wish because you are the boss in your kitchen. One other thing I love on dishes is pepper, black pepper. It is a MUST on most of my recipes. The recipe can be used for  tubers, vegetables and meat, preferably grilled.

Ingredients:

  • 6 – 10 hardneck garlic cloves
  • 1/2 – 1 cup sour cream
  • A pinch black pepper
  • 2 – 4 spring onions, chopped
  • Rosemary, plus for decorating

Instructions:

Add all of the ingredient to the food processor. Mix it well for at least 2 minutes. Serve it in a bowl, and sprinkle with additional black pepper and rosemary to decorate the dip.

Garlic + Sriracha

During the time I was living in the US I was never obsessed with sriracha as I am now in back in Angola. I was not a big consumer of it back in 2010, but I regret that because this sauce is amazing. It gives the right temperature to your food, and a very nice taste of fresh red jalapeño chili peppers. The idea with the sriracha and garlic with honey is that you have a nice sweet spicy dip for your vegetables, tubers, meat and fish specially if you use the hardneck type.

Ingredients:

  • 4-6 roasted garlic cloves
  • A bunch of cilantro
  • 1/4 cup sriracha
  • 1 tablespoon olive oil
  • 1 cup cherry tomatoes
  • 1 tablespoon honey
  • 2 – 4 spring onions, chopped
  • 1/8 teaspoon black pepper
  • 1 tablespoon ketchup
  • Salt

Instructions:

Add all the ingredients in the food processor. Grab a spoon and taste the seasoning. If the sauce is not sweet enough, add more honey or ketchup.

There you go, very easy recipes with garlic for tasty meals. Just a quick tip: If the ingredients together are unable to match your taste, add something else. You are the creator of your dishes. It should be adjusted to you. But I feel these recipes will not disappoint you. You will be craving for more, just like I am now 🙂
